    About this recipe: This is my version of cock-a-leekie that uses chicken thighs. I like to add fresh thyme and parsley.

    Ingredients
    Serves: 12 

    • 1.75kg (4 lb) chicken thighs
    • 2.5L (4 pints) water
    • 1 onion, chopped
    • 50g (2 oz) pearl barley
    • 275ml (10 fl oz) chicken stock
    • 7 leeks, sliced
    • 2 sticks celery, sliced
    • 1 sprig fresh thyme, leaves chopped
    • small handful chopped fresh parsley
    • 1 teaspoon salt
    • 1/2 teaspoon freshly ground black pepper

    Method

    1. In a large pot over high heat, combine the chicken, water, onion and pearl barley. Bring to a boil, reduce heat to low and simmer for 1 hour. Remove chicken, discard the bones and skin, chop meat into bite size pieces and return to the pot.
    2. Add the chicken stock, leeks, celery, thyme leaves, parsley, salt and pepper. Simmer for 30 more minutes, or until all vegetables are tender.

    Made this for a party on this year's Burns' Night, and it was a complete success, even upstaging the haggis! Very easy to prepare; the kind of thing that can be left on its own while other things need attention. And ingredients can be halved to accommodate smaller crowds. - 15 May 2010

    Made this last January for a Burns Supper. Tasted amazing and went down very well with my guests (who know a decent bite). Even got asked for the recipe! As the other review said, the haggis was in danger of being upstaged. Will be making this again this year. Thanks - 12 Jan 2013

    This is absolutely delicious, I substituted carrots for celery and rosemary instead of thyme. My new favourite, will definitely make again! - 18 Sep 2015
