This is my version - I like to add fresh thyme and parsley.

Ingredients

1.75kg (4 lb) chicken thighs

2.5L (4 pints) water

1 onion, chopped

50g (2 oz) pearl barley

275ml (10 fl oz) chicken stock

7 leeks, sliced

2 stalks celery, sliced

1 sprig fresh thyme, leaves chopped

small handful chopped fresh parsley

1 teaspoon salt

1/2 teaspoon freshly ground black pepper
Preparation method
- In a large pot over high heat, combine the chicken, water, onion and pearl barley. Bring to a boil, reduce heat to low and simmer for 1 hour. Remove chicken, discard the bones and skin, chop meat into bite size pieces and return to the pot.
- Add the chicken stock, leeks, celery, thyme leaves, parsley, salt and pepper. Simmer for 30 more minutes, or until all vegetables are tender.
