About this recipe:This fruit compote is what you want it to be - use any combination of dried fruits: figs, apricots, dates, sultanas, pears, apple, peaches, prunes, etc. I enjoy experimenting and trying out new dishes. The best thing about this is that you can improvise and add or take away different things according to your taste. This is so easy - not much preparation, can be prepared a couple of days ahead and refrigerated.
450g mixed dried fruit
100g sliced orange (including the skin)
50g sliced lemon (including the skin)
2 bananas, thinly sliced
1 red apple, unpeeled, finely chopped
1 pear, finely chopped
1 small tin crushed pineapple
750ml orange juice (or enough to cover)
dark brown soft sugar to taste (optional)
1 teaspoon ground ginger
1 teaspoon ground cinnamon (or one cinnamon stick)
Cream and/or ice cream to serve

Firstly take a large glass bowl and place the dried fruit inside, cutting the larger pieces to the size you would like. Then chop the fresh fruits and add to the bowl, along with the tin of pineapple.
At this stage add the orange juice and port, so that the apples and bananas do not go brown. Add sugar (if desired) and spices.
Stir well, and place in a microwave, on High, for 15 minutes, stirring every 5 minutes. If you think the fruit is not soft enough, cook for longer, as microwaves vary.
When cooked to your satisfaction, serve straight away, or place in refrigerator to eat chilled later. It is delicious, either way. Serve spooned over whipped cream or ice cream.
