Christmas Pancakes

Be extra indulgent on Christmas morning with these easy pancakes. You could use your favourite pancake recipe to make these from scratch, but why not go easy on yourself? My family love this and cannot wait to have it on Christmas morning.

- 12 shop-bought pancakes
- 410g jarred mincemeat
- 2 tablespoons brandy
- vanilla ice cream, to serve

- Preheat oven to 150 C / Gas 2. Wrap the pancakes in foil and place in the oven for 10 minutes to gently warm.
- Place the mincemeat, brandy and 2 tablespoons of water in a saucepan over medium heat and warm through.
- To serve, place pancakes on serving plates. Top with a scoop of ice cream and a spoonful of warm fruit mince mixture.
