About this recipe: These easy biscuits are spiced with cinnamon, then the centre of each is filled with a drop of jam. Use your favourite jam - anything from blackberry to damson would work a treat here!


Serves: 12 

  • 90g self-raising flour
  • 1 teaspoon ground cinnamon
  • 3 tablespoons rice flour
  • 70g unsalted butter, softened
  • 4 tablespoons sugar
  • 1 egg, beaten
  • berry jam

  1. Preheat the oven to 180 C / Gas 4. Sift together the flour, cinnamon and rice flour.
  2. In another bowl, cream the butter and sugar until light and fluffy, then gradually add the egg, beating well.
  3. Fold into the sifted ingredients until just combined. Roll 1 teaspoon of the dough into a ball and put on a baking tray lined with baking parchment.
  4. Repeat with the remaining mixture. Press a deep indent into the centre of each ball and fill with a little berry jam.
  5. Bake for 8-10 minutes, or until golden.
