Courgette and pepper sabzi

    'Sabzi' refers to any vegetable dish in Indian cuisine. I got inspiration for this recipe from Madhur Jaffrey's curry bible. It's a super easy recipe, and quick and a delicious mix of flavours.

    Serves: 3 

    • 3-4 tablespoons oil or ghee
    • 1/2 teaspoon cumin seeds
    • 1/4 teaspoon brown mustard seeds
    • 400g courgettes
    • 1 green pepper
    • 2 tablespoons natural yoghurt
    • 1 tablespoon ground coriander
    • 1 teaspoon salt (or to taste)
    • pinch cayenne pepper
    • squeeze lemon juice

    1. Heat oil then add cumin and mustard seeds once hot. Fry until mustard seeds start to pop.
    2. Add courgettes and green pepper and fry until courgettes are golden brown
    3. Once courgettes are cooked, turn down heat to a low simmer and add yoghurt, cook carefully until yoghurt evaporates.
    4. Add coriander and salt and fry gently until mixed through.
    5. Take off heat and garnish with a pinch of cayenne pepper and squeeze of lemon juice
