This is a super simple recipe for curried prawns, great served over rice for a midweek supper. You could use a good curry paste instead of the curry powder, if desired, and you can also add more curry powder to taste.

1 onion, chopped
1 tablespoon olive oil
12 large prawns
1 teaspoon curry powder
1 tin evaporated milk
1 teaspoon cornflour
1 teaspoon water

Fry chopped onion in olive oil over medium high heat. Add prawns and curry powder.
Mix cornflour and water. Add to prawns along with the tin of milk. Simmer for a few minutes until thick.
