Feta and Sundried Tomato Spinach Rolls

    Cream cheese, feta cheese, basil, garlic and sundried tomatoes are wrapped in spinach leaves, then grilled until crisp. Serve on a bed of rocket leaves.

    Makes: 20 spinach rolls

    • 300g cream cheese
    • 200g feta cheese
    • 2 tablespoons chopped fresh basil
    • 1 1/2 tablespoons finely chopped garlic
    • 20 spinach leaves
    • 5 almonds, chopped
    • 10 chopped sundried tomatoes
    • olive oil

    1. Preheat grill.
    2. Mix together cream cheese, feta, sundried tomatoes, basil and garlic. Stir until creamy, with no lumps.
    3. Blanch the spinach leaves.
    4. Wrap a dollop of cheese mix in each spinach leaf. Brush with olive oil.
    5. Sprinkle almonds on the top or alternately roll them in the almonds
    6. Grill spinach rolls until slightly crispy on top. Let cool for 10 minutes.
