About this recipe:
This wonderful condiment goes exceptionally well with any hot or cold meats. Feel free to adjust the amounts of mustard and curry powder to your taste.
1kg onions, sliced or diced
600g caster sugar
550ml malt vinegar
1 tablespoon salt
3 tablespoons dry mustard powder
3 tablespoons curry powder
3 tablespoons cornflour, mixed with a little water
- Skin tomatoes by coring and cutting a cross on top. Pour boiling water over and leave until cool enough to handle. Then skin and dice.
- Boil all ingredients together for approximately 1 hour or until tender.
- Gradually stir in the cornflour mixture whilst stirring. Cook for 5 minutes or until the sauce has thickened.
- Put in clean jars, filling right to the top before putting lid on. When cold tighten lid again.
Chunky or smooth
If you like a chunky relish cut in large pieces or smaller for a finer relish.
