About this recipe: This is a delicious meal in one dish. Rice is layered with tuna in a curry-spiced white sauce, topped with breadcrumbs and cheese and then baked.


Serves: 4 

  • 285g white rice
  • 1 (400g) tin tuna in brine, drained and flaked
  • 1 (55g) packet chicken noodle soup, such as Knorr's
  • 1 teaspoon mild curry powder
  • 250ml milk
  • 15g butter
  • 2 tablespoons plain flour
  • breadcrumbs
  • grated cheese
  • 250ml water

  1. Cook rice according to packet's instructions.
  2. Heat chicken noodle soup in 250ml water for 3 minutes. Add tuna.
  3. In a small saucepan, mix together flour and butter to form a paste. Gradually add the milk, stirring continuously to form a smooth white sauce. Heat over low heat until thick. Add curry powder.
  4. Stir white sauce into tuna mixture.
  5. Place a layer of rice into the bottom of a medium greased baking dish. Top with a layer of tuna mixture, then a layer of rice an then the remaining tuna mixture. Sprinkle with breadcrumbs and scatter with cheese.
  6. Bake in 180 C / Gas 4 oven for 30 minutes.
