About this recipe:This is a delicious meal in one dish. Rice is layered with tuna in a curry-spiced white sauce, topped with breadcrumbs and cheese and then baked.
285g white rice
1 (400g) tin tuna in brine, drained and flaked
1 (55g) packet chicken noodle soup, such as Knorr's
1 teaspoon mild curry powder
2 tablespoons plain flour

Cook rice according to packet's instructions.
Heat chicken noodle soup in 250ml water for 3 minutes. Add tuna.
In a small saucepan, mix together flour and butter to form a paste. Gradually add the milk, stirring continuously to form a smooth white sauce. Heat over low heat until thick. Add curry powder.
Stir white sauce into tuna mixture.
Place a layer of rice into the bottom of a medium greased baking dish. Top with a layer of tuna mixture, then a layer of rice an then the remaining tuna mixture. Sprinkle with breadcrumbs and scatter with cheese.
