Date and chocolate chip cake

    This cake is wheaty, moist and delicious. Crushed Weetabix®, dates and chocolate chips grace this wonderful cake. Enjoy with a mug of tea or coffee.

    Serves: 8 

    • 90g butter, softened
    • 1 teaspoon bicarbonate of soda
    • 250ml boiling water
    • 4 Weetabix® cereal biscuits, crushed
    • 165g dates, pitted
    • 200g caster sugar
    • 1 egg, lightly beaten
    • 125g self raising flour
    • 85g chocolate chips

    1. Preheat oven to 180 C / Gas 4. Line a baking tray with baking parchment.
    2. In a large bowl, mix together bicarbonate of soda with boiling water. Add the softened butter, sugar, dates and Weetabix®. Mix well. Stir in egg and flour, then add the chocolate chips.
    3. Pour mixture into prepared tray and bake in preheated oven for 30 minutes.

    Have made this 3 times now, 3rd time substituted chocolate chips for chopped mixed nuts. Absolutely love it, and it went down very well with the family.  -  18 Sep 2013
