Fruit Salad with Greek Yoghurt

    A super-easy fruit dessert made with wonderful summer fruits. Strawberries, peaches, passion fruit and raspberries are topped with creamy Greek yoghurt, then liberally sprinkled with brown sugar before being chilled for 8 hours.

    Serves: 8 

    • 1 punnet strawberries, hulled and sliced
    • 4 perfectly ripe peaches or nectarines, peeled and sliced
    • 1 passion fruit, pulp only
    • 250g raspberries
    • 2 (500g) tubs Greek yoghurt (optional honey flavoured)
    • dark brown soft sugar
    • demerara sugar

    1. Put stawberries, peaches, passion fruit pulp and raspberries in a large bowl.
    2. Spoon yoghurt onto the fruit in dollops. Heavily sprinkle with dark brown soft sugar, then with demerara sugar, completely covering the top of the yoghurt.
    3. Cover with cling film and refrigerate for at least 8 hours, but no more than 24. (You can use any fresh or stewed fruit.)
