About this recipe: These muffins are quick and easy to make. They are flavoured with mature Cheddar and French onion soup mix. They go particularly well with soups or stews.


Serves: 6 

  • 250g plain flour
  • 1 tablespoon baking powder
  • 1 teaspoon caster sugar
  • 90g butter, melted
  • 115g mature Cheddar cheese, grated
  • 250ml milk
  • 1 egg, beaten
  • 1 (40g) packet French onion soup

  1. Preheat oven to 220 C / Gas 7. Lightly grease a muffin tin.
  2. Sift flour and baking powder into a bowl. Add soup mix, cheese, sugar and mix well.
  3. In another bowl, combine butter, egg and milk.
  4. Make a well in the dry ingredients and pour in the wet ingredients.
  5. Mix until the mixture is moist. Do not overmix.
  6. Spoon into greased muffin tin and bake for 15-20 minutes.
