About this recipe: This joint is simple to prepare and tastes fantastic. A leg of lamb is studded with garlic, rubbed with lemon juice, rosemary and thyme before being roasted.


Serves: 8 

  • 1 leg of lamb
  • 1/2 clove garlic, sliced
  • 1 clove garlic, finely chopped or crushed
  • 1 1/2 teaspoons fresh rosemary (or dried)
  • 1 teaspoon dried thyme
  • 1 lemon, juiced
  • salt and pepper to taste
  • 2 tablespoon olive oil

  1. Preheat oven to 180 C / Gas 4. Place the olive oil into roasting tin.
  2. Cut thin slits on lamb and insert the garlic slices in the slits.
  3. Rub lamb with lemon juice. Combine the herbs and chopped garlic; rub this mixture onto lamb.
  4. Season with salt and pepper.
  5. Roast for 60-80 minutes (depending on the size of the roast).
