Butter Beans with Thyme

    This delicious side dish is packed full of protein and flavour. Butter beans are sauteed with red onion, pumpkin seeds and thyme. You can use any beans or herbs you prefer.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 red onion, sliced
    • 2 tablespoons pumpkin seeds
    • 1 tablespoon fresh thyme, chopped
    • 1 (400g) tin butter beans, drained and rinsed
    • salt and pepper, to taste

    1. Heat olive oil in a large pan. Add onion, pumpkin seeds and thyme. Cook gently for 15 minutes, until onion is soft.
    2. Add butter beans. Mix well and season with salt and pepper.
