These treats are perfect! They are crispy on the outside and incredibly fluffy on the inside. Doughnut batter is deep-fried, then tossed in icing sugar to serve. Yum!

2 tablespoons caster sugar
1 lemon, zest grated
125ml full fat milk
315g self-raising flour
oil for deep frying
1 brown paper bag
icing sugar to serve

Heat oil in a deep pot.
Beat eggs and sugar together. Add lemon zest and milk, then mix. Add self-raising flour and mix.
Place 1/2 teaspoon of mixture into oil. If mixture bubbles and floats to the surface, the oil is hot enough to cook.
Once oil is hot. Cook mixture in batches. Using a salad spoon (or a spoon equivalent to 3 tablespoons) drop mixture into oil. The mixture should bubble and float to the surface. Once one side is cooked, the doughnuts will automatically turn over.
Once both sides of the doughnuts are cooked, drain on kitchen towels for 1-2 minutes, then place in brown paper bag with icing sugar. Shake doughnuts so they are covered in icing sugar.
