    About this recipe: A simple, yet delicious potato pancake. Potatoes are blitzed in a food processor and pan-fried to perfection. Serve with a dollop of soured cream, if desired.

    Ingredients
    Serves: 6 

    • 450g potatoes, unpeeled, scrubbed and cut into chunks
    • 1 egg
    • 1 small onion, quartered
    • 2 tablespoons flour
    • 1 tablespoon softened butter
    • 1/2 teaspoon sugar
    • 1/2 teaspoon salt
    • 1 dash pepper

    Method

    1. Blend 3/4 of the potatoes in a food processor, using the steel blade. Add the onion, flour, butter, sugar, salt and pepper and blend until smooth.
    2. Grate the remaining potatoes and mix with the blended ingredients. Fry spoonfuls of the mixture on a hot, well-greased frying pan. Turning when the edges are brown.
