A simple, yet delicious potato pancake. Potatoes are blitzed in a food processor and pan-fried to perfection. Serve with a dollop of soured cream, if desired.
Egg is mentioned in the ingredients but not the instructions; I made an assumption when to add it. The recipe directs you to cut all the potato up but it would have been easier to set 1 aside for the later mentioned grating. My food processor didn't chop the potatoes very well so maybe this adversely affected the taste but it felt too raw. - 16 Feb 2017
