This is a fantastic vegetarian pasta, which is quick and easy to make. Linguine is topped with sauteed courgette, tomatoes, feta cheese and pine nuts. Simple and delicious.

1 small onion, chopped
1 small courgette, chopped
crushed garlic to taste
1 small tomato, sliced into 8 wedges
crumbled feta cheese to taste
pine nuts to taste
75g linguine
olive oil as needed

Bring a large pan of salted water to the boil. Add the linguine and cook according to the packet's instructions.
When the linguine has 7 minutes cooking time left. Heat a large frying pan with oil. Saute onion, garlic and courgette for 3-4 minutes. Add tomato wedges, gently stir.
Drain linguine and plate. Top with sauteed courgettes and tomatoes, then scatter with crumbled feta and pine nuts.
