Chocolate Peanut Butter Balls

    A great recipe to make with the kids. Puffed rice cereal is blended with peanut butter, then coated in chocolate. This recipe makes about 90 balls. They are fantastic for kids parties.

    Serves: 45 

    • 140g puffed rice cereal, such as Rice Krispies
    • 500g ready-made rich and creamy icing, such as Betty Crocker
    • 375g peanut butter
    • 250g butter
    • 375g dark cooking chocolate
    • 75g coconut oil

    1. Place rice cereal and creamy icing into a large bowl and mix together.
    2. Place butter and peanut butter into a microwave-safe bowl and microwave until melted; mix together with the dry ingredients until mixed well
    3. Form into small balls and place in fridge to set.
    4. Line 2 large baking trays with foil.
    5. Melt chocolate and coconut oil in a double boiler. Dip the peanut butter ball in this mix until coated; place on foil trays and refrigerate until set.


    Coconut oil is a white semi-solid fat at room temperature and a clear liquid when heated. You can purchase it in health shops or online. Alternatively, you can use vegetable shortening, such as Crisco or Trex, if desired.
