Mince Pies

    This recipes takes advantage of ready-made shortcrust pastry cases. They are filled with ready-made mincemeat, then topped with a homemade buttery shortbread topping. Enjoy these traditional Christmas treats anytime of the year!

    Makes: 12 mince pies

    • 250g butter
    • 4 tablespoons caster sugar
    • 1/2 teaspoon vanilla extract
    • 250g plain flour, sifted
    • 1 pinch salt
    • 1 (820g) jar mincemeat
    • 12 small uncooked shortcrust pastry cases

    1. Preheat oven 190 C / Gas 5.
    2. Cream together butter and sugar until light and fluffy. Add vanilla and carefully fold in flour and salt.
    3. Fill a piping bag with the biscuit batter and chill whilst filling the pastry cases.
    4. Place 1 tablespoon mincemeat in each pastry case.
    5. Pipe batter directly onto mincemeat. Bake in preheated oven for 15-25 minutes or until golden.
