Makes: 12 mince pies
4 tablespoons caster sugar
1/2 teaspoon vanilla extract
250g plain flour, sifted
1 pinch salt
1 (820g) jar mincemeat
12 small uncooked shortcrust pastry cases

Preheat oven 190 C / Gas 5.
Cream together butter and sugar until light and fluffy. Add vanilla and carefully fold in flour and salt.
Fill a piping bag with the biscuit batter and chill whilst filling the pastry cases.
Place 1 tablespoon mincemeat in each pastry case.
Pipe batter directly onto mincemeat. Bake in preheated oven for 15-25 minutes or until golden.
