Bacon and Tomato Pasta Sauce

About this recipe: A super-delicious pasta sauce, which is simple to throw together. Bacon is simmered with red pepper in a rich tomato sauce. Serve with freshly cooked pasta and grated Parmesan, if desired.


Serves: 4 

  • 100g streaky bacon, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, finely chopped
  • 2 (400g) tins chopped tomatoes
  • 2 tablespoons tomato puree
  • 1 red pepper, diced
  • 1/2 teaspoon sugar
  • salt and freshly ground black pepper
  • cooked pasta, to serve

  1. Heat the oil in a large saucepan until hot. Saute bacon, onion and garlic for 5 minutes or until golden.
  2. Add chopped tomatoes, tomato puree, red pepper and sugar. Season with salt and pepper.
  3. Simmer sauce gently, uncovered for about 1 hour. Adjust the seasoning if necessary. Serve with hot pasta.
