Spicy Slow Cooker Chicken

    This chicken dish is quick and easy to prepare and is perfect for those cold winter nights. Serve with rice, couscous or pitta bread.

    Serves: 6 

    • 2 dessertspoons olive oil
    • 1 lemon, juiced
    • 2 teaspoons paprika
    • 1 1/2 teaspoons dried oregano
    • 3 teaspoons Nando's hot peri-peri sauce or chilli powder to taste
    • 2 cloves garlic, finely chopped
    • 1 teaspoon salt or to taste
    • 2 tablespoons tomato puree
    • 160g fruit chutney
    • 8 skinless chicken thigh fillets, excess fat removed and cut in half

    1. Grease the pan of the slow cooker.
    2. Place the oil, lemon juice, paprika, oregano, hot sauce, garlic, salt, tomato puree and chutney into the slow cooker. Stir well.
    3. Add the chicken thighs, then stir to coat with the sauce.
    4. Cook on LOW for 5 hours. Serve hot with basmati rice.

    Alternative cooking methods

    If you don't have a slow cooker. Marinate the chicken in the sauce for a few hours, then bake in a casserole dish, covered at 180 C / Gas 4 for about 40 minutes.

    Lovely . I like hot food so I added chillie powder and the hot sauce and I served it with my own spicy rice. I will cook this next week for my daughter she will love it  -  15 Oct 2016


    Very nice, will eat this again, although the chicken was done and falling apart after just 4 hours  -  07 Aug 2016
