    About this recipe: These scones are incredibly light and fluffy. They are also quick and easy to whip up. Enjoy for afternoon tea with jam and clotted cream, if desired.

    Ingredients
    Makes: 12 scones

    • 250g self-raising flour
    • 1 egg
    • 1 tablespoons caster sugar
    • 125ml skimmed milk
    • 125ml double cream

    Method
    Prep:25min  ›  Cook:12min  ›  Ready in:37min 

    1. Preheat oven to 220 C / Gas 7. Lightly grease a large baking tray.
    2. Beat egg and sugar together. Stir in milk and cream, then add flour.
    3. Knead on a lightly floured surface until smooth.
    4. Cut into 12 scones with a cutter or the rim of a glass. Transfer to prepared baking tray.
    5. Bake in preheated oven for 12 minutes. Let cool for 5-10 minutes before serving.

    just made this recipe! yum yum delish! i didnt cut into 12 scones as i thort they would be too small instead i made 9 and to my suprise the grew massivly! next time will chop into 12 for sure! 1st time making scones that didnt turn out like bricks!!  -  27 Feb 2011  (Review from Allrecipes AU | NZ)
