Plain Cream Scones

    These scones are incredibly light and fluffy. They are also quick and easy to whip up. Enjoy for afternoon tea with jam and clotted cream, if desired.

    Makes: 12 scones

    • 250g self-raising flour
    • 1 egg
    • 1 tablespoons caster sugar
    • 125ml skimmed milk
    • 125ml double cream

    1. Preheat oven to 220 C / Gas 7. Lightly grease a large baking tray.
    2. Beat egg and sugar together. Stir in milk and cream, then add flour.
    3. Knead on a lightly floured surface until smooth.
    4. Cut into 12 scones with a cutter or the rim of a glass. Transfer to prepared baking tray.
    5. Bake in preheated oven for 12 minutes. Let cool for 5-10 minutes before serving.
