    About this recipe: These scones are incredibly light and fluffy. They are also quick and easy to whip up. Enjoy for afternoon tea with jam and clotted cream, if desired.

    Makes: 12 scones

    • 250g self-raising flour
    • 1 egg
    • 1 tablespoons caster sugar
    • 125ml skimmed milk
    • 125ml double cream

    1. Preheat oven to 220 C / Gas 7. Lightly grease a large baking tray.
    2. Beat egg and sugar together. Stir in milk and cream, then add flour.
    3. Knead on a lightly floured surface until smooth.
    4. Cut into 12 scones with a cutter or the rim of a glass. Transfer to prepared baking tray.
    5. Bake in preheated oven for 12 minutes. Let cool for 5-10 minutes before serving.
