    About this recipe: There's more fruit in this cake than you can shake your stick at. It's moist, dense and packed full of plump dried fruit. Enjoy during Christmastime. It will keep for 3-4 weeks.

    Serves: 30 

    • 1kg dried mixed fruit
    • 150g fruit and nut chocolate, chopped
    • 250g self-raising flour
    • 500ml strong black coffee (or orange juice)

    Prep:20min  ›  Cook:2hr  ›  Extra time:8hr soaking  ›  Ready in:10hr20min 

    1. Soak fruit overnight in coffee. Next day, add chocolate and flour and mix well.
    2. Line and grease bottom and sides of a round 22 or 28cm cake tin. Preheat oven to 150 C / Gas 2.
    3. Bake the cake in preheated oven for 1 3/4 to 2 hours. Check for doneness at 1 1/2 hours.

    Do you melt chocolate of put in in chunks to melt in cake mixture? - 23 Jul 2015


    Well I have got to be honest I didn't think it would work but was I wrong. It is the juiciest fruit cake that I have tasted. I will be making one for Christmas with a few adjustments to the ingredients, I will mix a good slug of brandy with the coffee and replace some of the fruit with cherries and maybe some ginger oh yes and just use whole nut chocolate xx - 14 Nov 2014


    made this at the weekend as stated above by nannyogg64 i didnt think it would work it took longer to cook than stated but it was the easiest recipe ever and tasted lovely will be making it again for a friends 50th wedding anniversary but will be decorated and with added brandy emmaw28 just chop the chocolate as small as you can and it melts while baking tastes divine - 27 Jul 2015
