The ultimate spaghetti Bolognese

    This is a fantastic recipe for the classic spag bol. It's quick and easy to make and is onion-free! Serve with garlic bread, if desired.

    Serves: 4 

    • 400g premium beef mince
    • 1 (400g) tin chopped tomatoes with basil
    • 290g tomato puree
    • 125ml water
    • 2 cloves garlic
    • 400g dried spaghetti pasta
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground pepper
    • 4 tablespoons extra-virgin olive oil
    • grated Parmesan cheese to taste

    1. Place oil and garlic into a cold frying pan. Place onto the heat and cook until the garlic starts to sizzle. Do not brown.
    2. Add beef and cook until brown. Stir to break into small clumps.
    3. Stir in tomatoes, tomato puree, salt, pepper and water. Mix well and simmer partially covered, for 30 minutes or until sauce starts to thicken. Stir occasionally.
    4. 10 minutes before the sauce is cooked, cook pasta as per packet's instructions. Do not drain, but use tongs to transfer directly onto serving plates.
    5. Sprinkle with Parmesan. Spoon pasta sauce on top, then sprinkle with more Parmesan.

    really lovely and my family cleaned their plates. Made a few small tweeks to the recipe second time round and added a few extras that gave it a 'kick'  -  28 May 2011
