Boozy Orange, Yoghurt and Almond Dream

    A light and refreshing dessert for a warm summer's day. Oranges are soaked in gin, then served with Greek yoghurt and toasted almonds.

    Serves: 6 

    • 6-9 large sweet oranges, segmented, cut into bite-sized pieces, juice reserved
    • 6 large cardamom pods
    • 225ml dry gin
    • 225g plain Greek-style yoghurt (or soured cream, but omit the lemon juice)
    • 2 tablespoons freshly squeezed lemon juice
    • 25-50 g flaked almonds

    1. Place oranges, juice and gin into a glass bowl.
    2. Crush the cardamom pods with the flat side of a knife and remove the small black seeds. Bruise the seeds in a mortar and pestle, then add to the gin. Stir and cover. Chill for 2-4 hours.
    3. Stir the lemon juice into the yoghurt, place in a glass or ceramic bowl, cover and refrigerate to let the flavour develop.
    4. Heat the grill to high. Spread the almonds on a baking tray and toast lightly, checking them constantly. Let the almonds cool.
    5. To serve, spoon the oranges into serving dishes or stemmed glasses, top with the yoghurt and sprinkle with the almonds.
