Toasted Pandoro with Berries and Mascarpone Cream

    This delicious dessert is simple to make and tastes fab. If pandoro is unavailable, use panettone instead. Feel free to substitute in any fruits that you desire.

    Serves: 6 

    • 4 tablespoons mascarpone cheese
    • 125ml cream
    • 1 teaspoon Muscat dessert wine
    • 1 tablespoon icing sugar
    • 1/4 teaspoon vanilla extract
    • 6 (1cm) slices Pandoro
    • 3 nectarines, stones removed and thinly sliced
    • 575g mixed berries
    • icing sugar, for dusting

    1. Place mascarpone, cream, Muscat, icing sugar and vanilla in a bowl and beat with an electric hand mixer for 1 minute or until light and fluffy.
    2. Lightly toast pandoro slices in the grill under low heat until golden and on each side. Set aside to cool.
    3. Place a slice of pandoro on each plate, spread with the mascarpone mixture and top with nectarine slices and berries. Dust with extra icing sugar.


    Is a rich buttery Italian Christmas cake. It's slightly similiar to panettone, but without fruit. It can be purchased in Italian speciality shops or online.
