Bacon Pasta with Creamy Tomato Sauce

About this recipe: This is an easy pasta dish that tastes fantastic. Pasta is tossed with bacon in a delicious creamy tomato sauce. Serve with roasted pine nuts and grated Parmesan.


Serves: 4 

  • 3 tablespoons olive oil
  • 1 onion, diced
  • 175g middle bacon, cut into strips
  • 3 cloves garlic, crushed
  • 2 teaspoons dried mixed herbs
  • 2 teaspoons dried basil
  • 1 teaspoons dried oregano
  • 1 teaspoon caster sugar
  • 825g passata
  • 150ml double cream
  • pine nuts to serve
  • grated Parmesan to serve
  • dried pasta for four people

  1. Bring a large pot of water to the boil.
  2. In a large frying pan heat oil, then add diced onion and cook until translucent. Add bacon strips and cook for 7-10 minutes.
  3. Add mixed herbs, basil, oregano and garlic and cook for 1 minutes, add passata and sugar, bring to a simmer and turn heat to low. Simmer on low for 20 minutes.
  4. Meanwhile, toast pine nuts in a non stick frying pan until golden. Remove pine nuts and place in a ceramic bowl. (Do not leave pine nuts in frying pan as they will continue to cook and burn).
  5. Add cream and stir through for 2 minutes, then turn the heat off.
  6. Depending on which pasta you are using, follow packet's instructions to time it to finish once sauce is cooked. It is better to finish the sauce earlier than overcook or leave the pasta.
  7. Mix together pasta and sauce.
  8. Place into bowls and sprinkle with pine nuts. Serve with Parmesan cheese.

For a more gourmet pasta dish

Add semi-dried tomatoes and fresh asparagus. Cut asparagus into 2cm pieces, place in a microwave dish with water, cover and cook for 6 minutes. Add semi-dried tomatoes and asparagus when adding cream.
