Prosciutto Wrapped Pork Meatballs

    This dish is simple, yet delicious. Pork meatballs are wrapped with prosciutto, pan-fried, then baked in tomato sauce with mozzarella cheese. They are perfect with pasta or mash.

    Serves: 4 

    • 500g minced pork
    • 3 spring onions, finely chopped
    • 125g instant polenta
    • 2 tablespoons grated Parmesan cheese
    • 50g cream cheese with herbs
    • 1 teaspoon chopped garlic
    • 8 slices prosciutto
    • 550g tomato pasta sauce, such as Dolmio bolognese sauce
    • 100g grated mozzarella cheese
    • oil spray for greasing

    1. Mix together minced pork, spring onions, polenta, Parmesan, cream cheese, garlic and 3 tablespoons pasta sauce. Form into 8 meatballs and refrigerate for 15 minutes.
    2. Preheat oven to 190 C / Gas 5.
    3. Wrap each meatball in 1 piece of prosciutto, securing with cocktail sticks.
    4. Spray a deep frying pan and a shallow baking dish with oil.
    5. Heat frying pan over medium heat; brown meatballs on all sides.
    6. Remove from heat and remove cocktail sticks.
    7. Place meatballs in baking dish, cover with remaining pasta sauce. Scatter with mozzarella cheese. Bake for 20 minutes until cheese is melted and sauce is bubbling.

    Absolutely delicious, first time we made it we had to substitute polenta with cous cous which was very tasty but not a patch on when you make it with all the correct ingredients!  -  10 Jun 2013
