Quick and Easy Potato Salad

    This potato salad takes just 8 minutes to cook. Potatoes, spring onions, celery and egg are microwaved, then stirred through with mayonnaise. Simple and delicious.

    Serves: 4 

    • 4 large potatoes, diced
    • 2 spring onions, diced
    • 1 stick celery. diced
    • 2 eggs, beaten
    • salt and pepper to taste
    • mayonnaise to serve

    1. Place potatoes, onions and celery into a microwave-safe bowl. Microwave on HIGH for 4 minutes, stir and cook for another 2 minutes.
    2. Add eggs, cook for a further 2 minutes. Remove, stir through to break up eggs. Add mayonnaise and serve warm or cold.

    Only giving 4 stars b/c I didn't make Exactly like the recipe. I have been making this potato salad for Years! I hard boil the eggs about half way through the cooking of the potatoes so they come out both at the same time. I always add mustard and chopped dill pickle along with black olives. My family and I are not fans of sweet potato salad so this is perfect for us! Thanks Ruffwood for giving us a true winning salad!  -  28 May 2013  (Review from Allrecipes AU | NZ)
