About this recipe: These biscuits have a wonderful combination of textures. There's the crunch from the cornflakes and chewiness from the sultanas. Enjoy with a cuppa.


Makes: 28 approximately

  • 100g butter
  • 100g caster sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 125g self-raising flour
  • 1 tablespoon plain flour
  • 80g sultanas
  • 100g cornflakes

  1. Preheat oven to 190 C / Gas 5. Grease and line 2-3 large baking trays with baking parchment.
  2. Cream butter, sugar and vanilla extract until light and fluffy. Beat in the egg. Add sifted flours and sultanas, creating a soft dough.
  3. Put cornflakes onto a tray. Take heaped teaspoons of the biscuit dough and drop into the cornflakes. Roll lightly in palms of hands to completely coat with the cornflakes.
  4. Place onto prepared baking trays, leaving plenty of room between the biscuits to spread.
  5. Bake in preheated oven for 20-25 minutes. Loosen biscuits from tray with a spatula whilst still warm. When cold store in an airtight container.
