About this recipe: The perfect pasta salad, which is suitable for vegetarians. Orzo is tossed with sweetcorn, red onion, green pepper, chilli, parsley, olives and flaked almonds in a balsamic dressing.


Serves: 6 

  • 250g orzo pasta
  • 1 (198g) tin sweetcorn kernels, drained
  • 1/4 small red onion, thinly sliced
  • 1/4 green pepper, thinly sliced
  • 1/2 red hot chilli, thinly sliced
  • 1/2 bunch flat-leafed parsley, chopped
  • 8 black olives, thinly sliced
  • 125ml balsamic vinaigrette
  • garlic granules to taste
  • 125g flaked almonds

Prep:30min  ›  Cook:10min  ›  Extra time:2hr chilling  ›  Ready in:2hr40min 

  1. Cook the orzo as per packet's instructions. Drain.
  2. Put orzo in bowl. Add onion, chilli, pepper and dressing, whilst pasta is still hot.
  3. Place in refrigerator and let cool.
  4. Add remaining ingredients, toss and serve.
