About this recipe:
The perfect pasta salad, which is suitable for vegetarians. Orzo is tossed with sweetcorn, red onion, green pepper, chilli, parsley, olives and flaked almonds in a balsamic dressing.
250g orzo pasta
1 (198g) tin sweetcorn kernels, drained
1/4 small red onion, thinly sliced
1/4 green pepper, thinly sliced
1/2 red hot chilli, thinly sliced
1/2 bunch flat-leafed parsley, chopped
8 black olives, thinly sliced
125ml balsamic vinaigrette
garlic granules to taste
125g flaked almonds
Extra time:2hr chilling ›
- Cook the orzo as per packet's instructions. Drain.
- Put orzo in bowl. Add onion, chilli, pepper and dressing, whilst pasta is still hot.
- Place in refrigerator and let cool.
- Add remaining ingredients, toss and serve.
