Beef meatballs in tomato sauce

    An easy dish, which can be enjoyed during any weekday. Well-seasoned meatballs are simmered in a deliciously rich tomato sauce. Serve with freshly cooked pasta.

    Serves: 4 - 6

    • 750g minced beef
    • 125g dry breadcrumbs
    • 1 onion, grated
    • 25g grated Parmesan cheese
    • 1 clove garlic, crushed
    • 2 tablespoons chopped parsley
    • 2 tablespoons chopped basil
    • 2 eggs
    • 1 tablespoon oregano
    • salt and pepper
    • plain flour for dredging
    • vegetable oil for frying
    • For the Tomato Sauce
    • 300g tinned chopped tomatoes with peppers
    • 1 small red pepper, chopped
    • 1 small red chilli, chopped (optional)
    • 1 tablespoon chopped fresh basil
    • 125ml water

    1. Combine beef, breadcrumbs, onions, Parmesan, garlic, herbs, eggs, salt and pepper in a large bowl; mix well. Shape into 20 meatballs, toss in flour and shake off any excess. Set aside.
    2. To make the tomato sauce: Combine the tinned tomatoes, red pepper, red chilli, basil and water. Bring to the boil. Set aside.
    3. Heat oil in large frying pan, cook meatballs until cooked through and browned all over. Add tomato sauce and simmer for 10 minutes. Serve with pasta.
