Spinach and smoked salmon fettucine

    This is a simple and delicious pasta dish, which is quick and easy to make. Fettucine is served with a creamy cheese sauce with smoked salmon and spinach.

    Serves: 4 

    • 375g dry fettuccine pasta
    • 60g butter
    • 250ml milk
    • 1 tablespoon plain flour
    • 80g grated Parmesan cheese
    • 250g smoked salmon, chopped
    • 1/2 bunch fresh spinach, chopped
    • 2 tablespoons capers, drained
    • 4 tablespoons chopped sun-dried tomatoes
    • 30g chopped fresh oregano

    1. Bring a large pot of lightly salted water to the boil. Add fettuccine and cook until al dente, about 11 minutes. Drain.
    2. Meanwhile, melt the butter in a medium saucepan over medium heat and blend with milk. Mix in the flour to thicken. Gradually stir in the Parmesan cheese until melted.
    3. Add salmon into the butter mixture. Stir in the spinach, capers, sun-dried tomatoes and oregano. Cook and stir about 3 minutes, until heated through. Serve over the cooked pasta.
