    About this recipe: This healthy soup is low in fat, low in calories and packed full of vegetables. Onions, carrots, cabbage, green beans, courgettes and herbs are simmered together in a tomato soup base.

    Ingredients
    Serves: 6 

    • 750ml beef stock
    • 1 (400g) tin chopped tomatoes with juice
    • 1 tablespoon tomato puree
    • 80g chopped onion
    • 60g sliced carrots
    • 150g chopped cabbage
    • 1 teaspoon crushed garlic
    • 55g green beans
    • 55g chopped courgette
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon dried oregano
    • salt and pepper to taste
    • 1 tablespoon oil

    Method

    1. Heat oil in a large non-stick frying pan until hot. Saute the onions, garlic and carrots for a few minutes.
    2. Add the beef stock, tinned tomatoes, tomato puree, cabbage, green beans, courgette, basil, oregano and salt and pepper.
    3. Bring to the boil, then simmer for 1 hour. Serve hot.
