1 large smoked chicken breast, thinly sliced
2 yellow flesh peaches, each sliced into 12 wedges
30g raw unsalted macadamia nuts
80g baby spinach leaves
shaved Parmesan cheese as needed
4 tablespoons extra virgin olive oil
2 tablespoons white balsamic vinegar
1 tablespoon honey
salt and ground black pepper to taste

Place the chicken breast, peaches, macadamia nuts, spinach and Parmesan cheese in a large bowl. Set aside.
To make the dressing, whisk together the oil, balsamic vinegar, honey and salt and pepper.
Toss the salad with the dressing just before servng.
