About this recipe: This salad has the perfect combination of flavours and textures. Smoked chicken breast, peaches, macadamia nuts, spinach and Parmesan are tossed in a balsamic-honey dressing. It's quick and easy to make and tastes fantastic.


Serves: 8 

  • 1 large smoked chicken breast, thinly sliced
  • 2 yellow flesh peaches, each sliced into 12 wedges
  • 30g raw unsalted macadamia nuts
  • 80g baby spinach leaves
  • shaved Parmesan cheese as needed
  • Dressing
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon honey
  • salt and ground black pepper to taste

  1. Place the chicken breast, peaches, macadamia nuts, spinach and Parmesan cheese in a large bowl. Set aside.
  2. To make the dressing, whisk together the oil, balsamic vinegar, honey and salt and pepper.
  3. Toss the salad with the dressing just before servng.


If your local supermarket doesn't stock smoked chicken breast, you can find it in speciality butchers or online.
