Make the most of this wonderful berry while it's in season. Strawberries and natural yoghurt are puréed with sugar, orange juice and ground cardamom in this recipe for a refreshing and unique chilled summer dessert soup.

Serves: 5
  • 700g (1 1/2 lb) strawberries
  • 450g (16 oz) low fat natural yoghurt
  • 100ml (4 fl oz) orange juice
  • 100g (4 oz) caster sugar
  • 100ml (4 fl oz) water
  • 1/8 teaspoon ground cardamom

In a blender, combine the strawberries, yoghurt, orange juice, sugar, water and cardamom. Purée until well mixed. Chill and serve.

what a spot on recipe. we have a pyo place close by and it's a favourite when the seasonal glut is on us. the lollies are great for the children, they seem to enjoy them more than just drinking it. i love it how ever it comes my way, totally delicious and totally refreshing x

Used different ingredients. This would be a 10 star. I make 1-2 times a week, everyone loves it. I do not use any water, use ginger instead of cardamom, and use vanilla yoghurt. I double and it is gone in a few hours. Thank you for a brilliant recipe.

This was an excellent combination of flavours. I made this into a smoothie and left out the water. I used frozen strawberries. The cardamom added a nice touch..but did not over power the drink. I think the OJ is what made this sooo good. Excellent recipe. Thanks for sharing Michelle.
