Potato, Cheese and Spaghetti Pie

    A great way of making use of leftover spaghetti. It's combined with egg yolks and cheese, topped with mashed potatoes and more cheese, before being baked to perfection.

    Serves: 4 

    • 125g cooked spaghetti
    • 3-4 potatoes, cut into chunks
    • 2 egg yolks
    • 375g grated Cheddar cheese

    1. Bring a large pot of lightly salted water to the boil. Boil the potatoes until tender. Drain and mash.
    2. Preheat oven to 180 C / Gas 4.
    3. In a springform tin or pie dish, mix together the cooked spaghetti, eggs and 1/3 of the cheese. Press into the bottom of the tin.
    4. Top with mashed potato and bake. Add more cheese as the potato starts to brown. Bake for an additional 10 minutes or until cheese is golden.
    5. Let sit, then slice and serve with salad.
