About this recipe: Tofu replaces the dairy in this creamy tomato soup - garnish with fresh basil.

Serves: 6 

  • 700g (1 1/2 lb) tomatoes, diced
  • 1/2 onion, chopped
  • 1 tablespoon olive oil
  • 400g (14 oz) tofu
  • 1 (600g) tub shop-bought tomato soup
  • salt and freshly ground black pepper to taste
  • chopped fresh basil to garnish

Prep:5min  ›  Cook:25min  ›  Ready in:30min 

  1. Sauté tomatoes and onion in olive oil until onions are clear.
  2. Blend the tomato soup and tofu in a blender, then add this blended mixture to the sautéed onions and tomatoes. Warm through and add water as needed. Add salt and pepper to taste, and top with chopped fresh basil.


For best results, use soft tofu.

Used different ingredients. This is a great recipe, especially for the kids. I added garlic and a blend of basil, oregano and rosemary. This is wonderful, especially on a cold night! Also great with cheese toasties or a nice loaf of crusty bread! Thanks! - 24 Jul 2008


Used different ingredients. ok well i altered this recipe a little bit and it was AMAZING. but if i hadnt altered it it would have been bland. SO i recomend that u add salt, pepper, basil, parsley and oregano to the sauteed tomatoes and onion. and i used tinned tomatoes so i didnt need to add water becasue the tinned tomatoes had so much tomato juice. good luck!! - 24 Jul 2008
