Sweet 'n' Salty Chicken with Egg

    This is a quick and easy Chinese-inspired chicken dish. Chicken is pan-fried with chopped omelette in a soy sauce and oyster sauce mix. Serve with white rice, if desired.

    Makes: 1 - 2 servings

    • 2 large eggs, beaten
    • 2 skinless and boneless chicken thighs, cut into chunks
    • 2 tablespoons soy sauce
    • 2 tablespoons oyster sauce
    • 2 tablespoons water
    • cooking oil spray

    1. Heat a non-stick pan or wok with oil spray.
    2. Once hot, pour egg into pan and cook to form an omelette. Set aside.
    3. In the same pan, fry the chicken until cooked through and lightly browned, about 4-5 minutes.
    4. Whilst the chicken is cooking, cut the omelette into chunks.
    5. Add the water, soy sauce, oyster sauce and chopped omelette to the pan. Cook until the sauce is thick.

    I liked the flavours in this dish and its super easy to make. As its a bit salty for my personal tastes, I think next time I will make it I might throw in a few more things..maybe a handful of veg or noodles.  -  30 Aug 2009  (Review from Allrecipes AU | NZ)


    Very nice recipe thank you. I added three sliced shallots and a handful of chopped basil about 2 minutes before serving. Fabulous.
