About this recipe: These bars are sweet, fruity, oaty and incredibly nutty. They are similar to flapjacks and are ideal for snacking on, dessert, afternoon tea or elevenses.


Serves: 18 

  • 250g unsalted butter
  • 275g dark brown soft sugar
  • 175g golden syrup
  • 465g porridge oats
  • 215g fresh strawberries, hulled and halved
  • 135g chopped macadamias

  1. Preheat oven to 180 C / Gas 4. Line a 28x38x5cm or similar sized tin with baking parchment.
  2. Melt the butter, sugar and golden syrup in a medium size saucepan. Stir in the oats and partly mix. Add the strawberries and macadamia nuts, mix and turn into prepared tin. Smooth top with wet spatula.
  3. Bake in a preheated oven for 25-30 minutes or until golden brown. Cool in tin for 2 minutes, then cut into fingers. Cool completely before removing from the tin.

Nice, but way too sweet and sticky, and that was after cooking for an extra 15 mins. I tried them a second time and cut the syrup by half, and they were much better. Great way to use up older strawberries, and I think other berries would work well too - 09 Jun 2012
