Strawberry and Passion Fruit Pavlova

    This is a great summer dessert, which is easy to make and tastes fantastic. Layers of crisp meringue are filled with cream, strawberries and passion fruit.

    Serves: 12 

    • 8 egg whites
    • 400g caster sugar
    • 300ml double cream, whipped
    • 250g fresh strawberries, hulled and sliced
    • 4 passion fruits, seeds scooped out
    • 1 teaspoon caster sugar

    1. Preheat oven to 180 C / Gas 4. Line two 28x38x5cm or similar sized tins with baking parchment.
    2. Beat egg whites until soft peaks form; add sugar, in batches, beating until dissolved between additions.
    3. Divide mixture between tins and spread out evenly. Bake one tin at a time in middle shelf of oven for 10 mins.
    4. Once both meringues are cooked, allow to cool completely.
    5. Place first meringue on plate and top with half the whipped cream. Top with sliced strawberries. Sprinkle with 1 teaspoon caster sugar.
    6. Place second meringue on top, add remaining cream. Top with passion fruit pulp.
    7. Cover and refrigerate until ready to serve.
