About this recipe: This non-alcoholic fruit punch is the perfect summer quencher. Tropical fruit juice is combined with ginger ale, orange juice, apricot juice, fruit and mint.


Serves: 20 

  • 2 litres tropical fruit juice
  • 2.5 litres dry ginger ale
  • 2 litres orange juice
  • 1 litre apricot juice
  • 2 (400g) tins tropical fruit salad /cocktail in juice
  • 250g fresh strawberries, hulled and cut into small pieces
  • 1 bunch fresh mint, leaves finely sliced
  • 3 cupfuls ice

  1. Stir together the tropical fruit juice, ginger ale, orange juice and apricot juice in a large bowl. Stir in fruit salad, strawberries, mint and ice. Chill for 90 minutes before serving.
