Crunchy chicken, avocado and cheese sandwich

    A great sandwich that can be enjoyed for lunch or dinner. A chicken escalope is sandwiched between two slices of bread, with mashed avocado, Gruyere and mayonnaise.

    Serves: 1 

    • oil as needed
    • 1 breaded chicken escalope
    • 1/2 avocado, mashed and seasoned
    • 1 slice Gruyere cheese
    • light mayonnaise to taste
    • 2 slices bread or 1 sandwich roll, sliced

    1. Heat oil in a frying pan. Fry chicken escalope until golden on both sides. Remove from pan and set aside on kitchen paper.
    2. Spread avocado on one slice of bread. Spread mayonnaise on the other slice of bread.
    3. Place the Gruyere and chicken over the avocado and close the sandwich with the remaining piece of bread.

    Very nice simple sandwich. I served it on a large toasted pretzel roll. My hubby and I shared it with a salad and gherkins and a nice crisp white wine. YUM!  -  06 Feb 2015
