This pasta bake is creamy, cheesy and irresistable. Both adults and kids love it. Macaroni is baked with bacon in an super-cheesy sauce. It's winter comfort food at its best.

1 (500g) packet macaroni pasta
2 tablespoons olive oil or rice bran oil
2 tablespoons plain flour
1-2 teaspoons wholegrain mustard
450-575g grated mature Cheddar cheese
1 tomato, sliced thinly
salt and cracked pepper to taste
6 rashers lean back bacon, diced
1 large onion, roughly chopped

Preheat oven to 170 C / Gas 3.
Bring a large pot of lightly salted water to the boil. Cook pasta according to packet's instructions. Drain and transfer to a baking dish.
Mix together the bacon and onion in a small bowl. Cover and microwave on HIGH for 5 minutes, stirring once during cooking.
Heat oil in a large saucepan until warm. Remove from heat, add flour and stir to mix. Add a little milk and mustard to form a smooth paste.
Return to the heat. Gradually add the remaining milk whilst stirring constantly. Cook until thickened. Remove from heat and add cheese. Stir until the cheese has melted. Add the bacon and onion, then season with salt and pepper.
Pour the sauce over the pasta and mix thoroughly. Top with sliced tomatoes and extra cheese, if desired. Season and bake in preheated oven for 20 minutes or until the top is golden. Serve hot with crusty garlic bread.
