About this recipe: This Creole-style stew is made with peppers, sweetcorn, tomatoes, okra and prawns. Quick to make and full of flavour.

Ingredients
Serves: 4 

  • 450g (1 lb) fresh prawns - peeled and deveined
  • 1/2 lime, juiced
  • 60g (2 oz) butter
  • 2 green peppers, seeded and chopped
  • 6 shallots, minced
  • 175g (6 oz) frozen sweetcorn
  • 100g (4 oz) okra, chopped
  • 3 tomatoes - blanched, peeled and chopped
  • 1 tablespoon tomato purée
  • 1/4 teaspoon dried thyme
  • 1 bay leaf
  • salt and pepper to taste
  • 1 green chilli, left whole

Method
Prep:20min  ›  Cook:25min  ›  Ready in:45min 

  1. Place prawns in mixing bowl and squeeze lime juice on top; toss to coat prawns evenly.
  2. Heat butter in a stockpot and sauté the green pepper with shallots for 2 to 3 minutes. Mix in sweetcorn, okra, tomatoes, tomato purée, thyme, bay leaf and chilli. Season with salt and pepper and simmer for 10 minutes.
  3. Add the prawns, return to a boil and simmer for another 5 minutes. Remove bay leaf and chilli before serving.

Altered ingredient amounts. I personally had the urge to add more onion and I just had to add garlic.It's a great recipe. - 24 Jul 2008

Used different ingredients. Okra, prawns and sweetcorn - what could be better! This definitely has to have garlic in it, at least at my house. The only thing wrong with the instructions was the part about "chill before serving". It tasted too good to wait that long! - 24 Jul 2008

Used different ingredients. Very tasty. I added crushed chillies for some real heat, and some leftover chicken breast. - 24 Jul 2008
