Grilled Tilapia with Parmesan

About this recipe: A quick and easy fish dish, which is packed full of flavour. Par-baked talipia fillets are topped with a Parmesan mayonnaise, before being grilled to perfection.


Serves: 2 

  • 450g tilapia fish fillets, rinsed and patted dry
  • 2 tablespoons softened butter, divided
  • 1 1/2 tablespoons freshly squeezed lemon juice
  • 4 tablespoons freshly grated Parmesan cheese
  • 2 tablespoons mayonnaise
  • 1 spring onion, finely chopped
  • 2 large cloves garlic, finely chopped
  • 1/2 teaspoon cayenne pepper
  • 1 1/2 teaspoon paprika
  • 1/4 teaspoon dried basil
  • 1 pinch black pepper
  • 2 dashes hot pepper sauce, such as Tabasco

  1. Preheat oven to 180 C / Gas 4.
  2. Grease the bottom of a 15x23cm or similar sized baking dish with 1 tablespoon softened butter. Place fish into the prepared dish in a single layer.
  3. Brush both sides of the fish with lemon juice. Bake in preheated oven for 10 minutes or until fish just begins to flake. Do not overcook.
  4. Meanwhile, combine cheese, remaining butter, mayonnaise, spring onion, garlic, cayenne pepper, paprika, basil, black pepper and hot pepper sauce in a bowl.
  5. Preheat the grill.
  6. Spread the cheese mixture over the fish and grill on HIGH for 2 minutes or until light golden brown. Serve with basmati rice.
