Marbled brownie cheesecake

    If you love chocolate brownies and cheesecake, this is the recipe for you. A rich, chocolaty base is swirled with a cream cheese topping, then baked to perfection.

    Serves: 16 

    • Chocolate layer
    • 185g butter or margarine
    • 200g caster sugar
    • 4 tablespoons unsweetened cocoa powder
    • 2 eggs, beaten
    • 125g plain flour
    • Cream cheese layer
    • 250g cream cheese
    • 65g caster sugar
    • 1 egg

    1. Preheat oven to 180 C / Gas 4.
    2. Heat together the butter, cocoa and sugar over low heat. Stir until the sugar melts. Remove from heat, then gradually add beaten eggs and flour, stirring continuously. Pour into a greased 23x18cm or similar sized tin.
    3. Cream together the sugar and cream cheese until light and fluffy. Add 1 egg and beat until smooth. Spoon over the chocolate layer and swirl the two layers together using a sharp knife.
    4. Bake in preheated oven for 35-40 minutes or until firm to touch and slightly golden.
    5. Cool in tin and cut in small squares or triangles to serve. To store, keep in an airtight container in the fridge.

    Loved it! Best brownies I've made at home! I added half a bar of good dark chocolate to the first step to make it more chocolately. I also forgot to add the egg to the cream cheese mix, but it didn't seem to matter! Will definitely be making again!  -  26 Aug 2013
