6 slices stale bread, crusts removed
softened butter, as needed
1 litre milk
4 tablespoons caster sugar
1 teaspoon vanilla extract
1 sprinkle ground nutmeg
50g sultanas (optional)

Preheat oven to 160 C / Gas 2 1/2. Lightly grease a large baking dish.
Butter the bread and cut each slice into triangles. Arrange the bread slices (best fit possible) into the prepared dish, scattering sultanas between layers.
In a large mixing bowl, beat together eggs and milk until smooth. Add vanilla and sugar and mix for 1-2 minutes until thoroughly combined.
Pour egg custard over the bread, sprinkle with nutmeg and bake for 60-90 minutes. Let stand for 10 minutes before serving.
