Bread and Butter Pudding

    This classic dessert will warm the cockles of your heart. Buttered bread is layered with sultanas, soaked in a sweetened egg custard and baked to perfection. It's the perfect winter comfort food.

    Serves: 12 

    • 6 slices stale bread, crusts removed
    • softened butter, as needed
    • 5 eggs
    • 1 litre milk
    • 4 tablespoons caster sugar
    • 1 teaspoon vanilla extract
    • 1 sprinkle ground nutmeg
    • 50g sultanas (optional)

    1. Preheat oven to 160 C / Gas 2 1/2. Lightly grease a large baking dish.
    2. Butter the bread and cut each slice into triangles. Arrange the bread slices (best fit possible) into the prepared dish, scattering sultanas between layers.
    3. In a large mixing bowl, beat together eggs and milk until smooth. Add vanilla and sugar and mix for 1-2 minutes until thoroughly combined.
    4. Pour egg custard over the bread, sprinkle with nutmeg and bake for 60-90 minutes. Let stand for 10 minutes before serving.

    made this for the 1st time ever today and i must say its absolutely yummy. i did add mixed spice to the custard mix. will defo make again  -  18 Oct 2012


    Possibly my pan wasn't big enough but I found 1L of milk was too much. Making it with fruit bread instead of adding sultanas. It's in the oven now so hopefully it'll be delicious!  -  26 Jan 2011  (Review from Allrecipes AU | NZ)
