    About this recipe: This dish is a little like risotto. It's quick and easy to make and tastes delicious. Rice is mixed with tuna, mushrooms and cream.

    Serves: 2 

    • 190g rice
    • 1 teaspoon finely chopped garlic
    • 2 1/2 tablespoons wholegrain mustard, divided
    • 300ml cream
    • 1 (400g) tin tuna, drained
    • 150g button mushrooms, chopped

    1. Cook the rice in a large pot according to the packet's instructions.
    2. Meanwhile, heat 1 tablespoon mustard in a saucepan with garlic.
    3. Add tuna, stir and allow tuna to heat through.
    4. Stir in the mushrooms and gradually add the cream. Gently heat the mixture without boiling.
    5. When the rice is cooked, strain and put back into the pot. Mix the tuna/cream mixture into the rice.
    6. Stir in the rest of the mustard and season with salt and pepper.

    I used mustard dill sauce instead, and it tasted good for a quick home meal but could've used a bit more flavour - 03 Mar 2012
